Seyval Blanc grapes are used to create a bright, fruit forward and elegant, yet approachable English sparkling wine. Secondary fermentation in bottle under the Traditional Method process provides structure to the mid-palate and detail to the body of the wine without overpowering the delicate crisp citrus fruit. Pronounced notes of lemon and Granny Smith apple stand out amongst a vibrant and delicate mousse with a clean finish.

Sourced from Nigel Howard's Watchcombe and Soutcote Vineyards in East Devon. Planting density <3500 vines per hectare. 7.5 hectares in total. All vines are trellised and use the double guyot training method with annual cane replacement. Rigorous winter and spring pruning, followed by debudding and leaf thinning during the growing season. Harvesting by hand. South facing slope on a clay/sand soil.

Perfect with oysters and crab, fish and chips, smoked salmon, spicy dishes, berries and citrus desserts or simply on its own as the perfect aperitif.
