The ULTERIOR project was born in 2007 as a trip to the past, the return to ancestral varieties to prepare the future of quality wines in Castilla-La Mancha.
Albillo Real is a variety recovered from those that before phylloxera could be found regularly in Castilla-La Mancha and neighbouring provinces to the north.
A very low-yielding, drought-resistant and short-cycle variety, one of the first varieties harvested in the region. A small percentage of the wine is aged in 600 litre French oak barrels and the rest, as the ancestors did, in 300 arrobas clay pots (about 5000 litres). After bottling, it has been in the cave for more than 12 months. Just 9000 bottles are produced and as with all his wines, their is no clarification or filtration to yield as much character as possible. Suplhur additions are also minimal with just a touch being added at bottling to ensure the wines reach their destination in tact!
Lemon yellow with golden reflections. Complex, intense nose, mineral touches accompanied by red apple and aromatic herbs, subtle cinnamon, all with a background reminiscent of quince. The medium and persistent acidity gives it expressiveness.
