The winery is located in Buxy, the southern gateway to the Côte Chalonnaise.
Originally from the Mâconnais, Laurent Cognard bought his first plots of land here in 1997 and set up full-time business in 2006 with 5.5 hectares as start-up capital. Today he cultivates almost 18 hectares of vines spread across Loché, Montagny and Mercurey, including 6.4 hectares in the Montagny 1er Cru appellation. Originally housed in the former medieval prison with picturesque and narrow cellars, the winery moved to the Château de Buxy in 2018. The winery values ​​natural viticulture and has received Terra Vitis certification for sustainable, environmentally friendly management from the 2020 harvest. In the cellar, Laurent respects the Burgundian tradition and adds a touch of modernity. The same applies to the aging, which is carried out in 500 litre barrels, a non-traditional format that for him particularly emphasizes the minerality of his white wines.
Laurent dedicates this cuvée to his grandparents. OR as Odette and Raymond, the family origins.
