The De Bortoli ‘Melba Vineyard’ at Dixons Creek has a rich history of exceptional Cabernet Sauvignon dating back to the 1970’s. The ‘Melba’ brand pays tribute to renowned operatic soprano diva, Dame Nellie Melba with three premium Cabernet Sauvignons; Melba Vineyard, Melba Amphora and Melba Reserve.
In 2019 it was decided to experiment with clay Amphoras to ferment Cabernet Sauvignon. The resultant wine post Amphora had already started to soften and gain amazing complexity. The long maceration times on skins and the aerating influence of the clay Amphora produce a rather ethereal style Cabernet.
Bright, medium red with bright edges and scented autumnal aromas. Mouth filling flavours, quite supple tannins, earthy and complex.
